Waffled Grilled Cheese

My favorite way to make grilled cheese is in a waffle maker.  I normally use oatmeal bread, pepperjack cheese, spinach, and a slice of tomato, and when you close the waffle maker it smooshes everything together.  Just cook it until the bred is golden brown like you would over the stove! (Oh, and don’t forget to spray the waffle maker with PAM or butter spray 😉 )


Bacon Wrapped Jalapeno Poppers

5 large-ish jalapeno peppers

1 pack cream cheese (I use the veggie flavor)

Shredded cheese

1 pack bacon


Preheat the oven to 450.  Cut the jalapeno peppers first.  Cut them into quarters (1 cut longways, 1 cut across).  Clear out the insides of the peppers as you are doing this.  You will probably get seeds all over your hands, so be sure to wash them before you do anything else.  (If you touch your face after touching the  seeds it burns…. a lot.  I know this from experience).  Once your hands are nice and clean, fill each jalapeno quarter with cream cheese, then sprinkle the shredded cheese on top and wrap with a whole or half strip of bacon.  Once you have done this with all of them and placed them in a pan, cook for 20 to 30 min depending on how dark the pan is and how crispy you like your bacon.

WARNING: These are extremely hot (spicy) for about 10 minutes after they come out of the oven, then the flavor becomes less intense.

1 ball of pizza dough

Pack of pepperjack cheese

Pack of guacamole

Small amount of ground beef

Pico de gallo


Cook the ground beef until it is pretty much done, then spread the pizza dough onto a pan.  Spread the guacamole on the dough (leave room for crust), then add cheese after that.  Finish off with the ground beef and pico de gallo, then cook at 375 for about 20 minutes.  Enjoy!

This was another NYE recipe.

1. Heat oven to 400 degrees.
2. Place small balls of dough in each tiny muffin cup. Brush balls with olive oil and sprinkle a pinch of cheese on top of each.
3. Bake at 400 for 15 minutes or until golden brown on the edges.
4. For the frosting, whip up some mashed potatoes and frost like normal cupcakes!

1 package small rolls

Ground beef

Brie cheese

1 package bacon

Apple Butter

We made these for NYE, and they were delicious!  We cut the rolls in half, spread apple butter on each side, and toasted them in the oven.  After that, we made tiny burger patties and cooked those.  To finish them off, we topped with brie cheese and a little bacon!

I made this a while back and just now found the picture, so the actual amounts are a bit fuzzy, but this is basically what I did:

For the bottom layer, use jello pudding.  We used chocolate and substituted the cold liquid for chocolate liquor.  We added a little knox as well so it would harden quicker.

Be sure to let the bottom firm up before you do the top part.  For this, we used cherry jello and substituted the cold liquid for cherry vodka.  We also added a cherry just for fun 🙂




Anybody who has ever had Sangria before knows it is the cheapest way to get drunk without tasting the alcohol.  This is how you make it from scratch:


1 jug of cheap wine.  I use Carlo Rossi because you can get a ton of it for less than $10.

Liquor (amount of your choosing) – I used bourbon last time, but you can use vodka as well.  Be careful not to add TOO much of this if you include it though

Lots of fruit.  I used peaches, pineapples, berries, etc.

To make it, just throw everything together in a large container and let it sit overnight.  The fruit will soak up the alcohol, and it will just taste like a sweet, fruity drink.

1 pizza crust… either homemade or store bought.

Chicken (either shredded or cut into small pieces)

1 pack shredded cheese

Small can of pineapples

1 small onion

The better part of a bottle of BBQ sauce (I use Sweet Baby Rays)

This takes around 3 hours to make if you make the dough from scratch, but it is well worth it if you have an afternoon to spare.  Once you have your dough ready (however you decide to do it), this is how you assemble the pizza:

1. Spread a layer of BBQ sauce on the dough.  Be sure to leave some space around the edges for the crust.

2. Cover this with a layer of cheese.

3. Partially cook the chicken and onions, and mix them in a bowl with more BBQ sauce.  Add this on top of the cheese an sauce.

4. Add another layer of cheese.

5. Add a layer of pineapple chunks on top

6. Bake at whatever temperature your dough recipe or package tells you to
